Creamy lemon pasta (gf + v)

Life is great! The other shoe will always drop at some point, so I’ve decided to have a positive attitude in the meantime and just revel in life and all the fun things that are happening at the moment. As dork as it might sound my current glee is the two-day course I’m presenting, and it feels great to be back in an interactive class environment where researchers can see results in front of their very eyes. With all this busy stuff, in between doing assignments, my other work and general care-taking of cats, there isn’t much time for fancy business when it comes to food. That’s where this fun and delicious creamy lemon pasta comes in. Spicy hot cross bun smoothie {vegan + gluten-free}

Wait, what? That’s right. Spicy hot cross bun flavoured smoothie. I’m not always in the mood for an actual hot cross bun (ok, lies, I’m lazy), so this is the best way to ensure all us smoothie freaks get the flavour sensation of one of my favourite Easter treats in our usual form. Am I driving you crazy? Blog world, you drive me insane! I’m nestled down in the southern hemisphere where it’s almost on the brink of the chilly season and I get cranky because the northern hemisphere is living it up with fruit salads, vegan ice-cream and taunting talk of picnics in the sun. Vegan nougat caramel chocolate cake

I quote:  “I will be your ETERNAL munchkin slave if you pull it off”. This is what Man-thing said when I quizzed him about snickers bars and the idea of making a snicker-ish cake (or a snickers parfait, which is for another magical time). I think I managed some swoon factor, for sure, though I forgot the bladdy peanuts, hence the reason this isn’t called a snickers cake and why Man-thing narrowly missed Munchkin status. I like to stick to the rules, after all. This cake, however, is on another mission altogether – super indulgent, hom nom goodness using healthy ingredients but far from being a spinster cake. Oh no, this is the naughty nun, the grinning grinch!

Giveaway winner + upside down vegan fig frangipane bars

I am super psyched to share today’s treat, not to mention the winner of Ricki Heller’s book Living Candida-Free! When my fig tree started blooming I begged for suggestions and one that grabbed me was fig frangipane thanks to Nicola. Almonds, as I’ve discovered, make everything better, so the combination of almond flour and almond butter, along with a few secret ingredients here and there, makes for something spectacularly decadent and shockingly healthy! Let’s ignore the fact that it isn’t in tart form, and probably doesn’t taste like a frangipane thing anyway – if it’s tasty it works! 😀barspreadcover
