Passion fruit curd {vegan + gluten-free}

It’s Friday, thank goodness! I figure I should celebrate that fact with as much glee as I can muster, which is surprisingly quite a lot, thanks to this curd. Curd for breakfast, lunch and pudding! 😀Passion fruit curd via Marfigs' Munchies {vegan + gluten-free}

Orange + blueberry cookies

I’m a cookie monster. That is, I can slay a packet in seconds flat but creating them is another story altogether. Somehow I have the motivation to make layered cakes, baklava and even chutney from scratch, but cookies are terrifying? Well, quirks and what not. Or laziness. Either way, it’s holiday (is my gloating getting to be a bit much? :D) so I have no excuses. Cookies for everyone!xmascookiessplash Continue reading

PB hummus + jam S’mores {vegan MOFO!}

I hope I’m not ruining anyone’s childhood by changing up the S’more a little, but I don’t have patience to make marshmallows (ok, so I don’t have a candy thermometer, rather!) and my childhood wasn’t one spent outside stuffing cookies with chocolate and white fluff (although if I’d known it existed I would have). Instead, I spent a ridiculous amount of time making endless PB & jam sandwiches; a food group unto itself. Well, there’s a time and place for everything, and the time for sandwiches is waning in my life as I find glee in better things, like lettuce wraps or PB & jam licked right off a spoon. This concoction is the fancy version of the spoon. With a fix of protein, grains, fat and fruit, I think I have my food pyramid covered 😉

Also, this post is for today’s Vegan Mofo 2015 theme: recreating a meal from my childhood. 😀pbhummussmoresplashcornweb

Chocolate meringue cookies

I’ve been a cookie monster of late. I’m not sure whether it’s a sense of ennui that’s becoming overwhelming, with cookies as a temporary cure, or whether they’re just that bladdy good that they require their own food group. There’s always a middle ground to be had, but these cookies are no slackers in either department. Those bits of crushed meringue really make this a stunning little cookie, so let’s head over to the recipe! 🙂topmeringuecookiessplash Continue reading

Buckwheat rusks {vegan +gluten-free}

Today’s post makes me giddy, because I get to share something super typically South African – the loyal, hardworking rusk. A twice-baked hard biscuit, it’s perfect as a quick snack or breakfast. Ideally it’s meant to be dunked in a hot beverage, but it’s also great to chew as is or give to teething babies, if you’ve got some of those lying around. marfigsruskssplash

Blackberry chocolate thumbprint cookies

Every year I like to bake some goodies for the security guards at work, since they’re always super friendly and helpful, and they have a pretty sucky job dealing with defiant, loud students and cranky professors all day long. I decided to try thumbprint cookies again, this time with more jazz and snazz to them. I’ve been hoarding a bottle of blackberry jam for exactly this occasion, which also gave me an excuse to make peanut butter and jam fingers :pbcookies7And in case you missed it, be sure to check out my top 10 last minute dishes and 10 tips for last minute prep. 😀 Goodness knows natural calming remedies aren’t enough – a solid bullet point to-do list is the only way I get through these crazy times of year!
