I’m a cookie monster. That is, I can slay a packet in seconds flat but creating them is another story altogether. Somehow I have the motivation to make layered cakes, baklava and even chutney from scratch, but cookies are terrifying? Well, quirks and what not. Or laziness. I hope I’m not ruining anyone’s childhood by changing up the S’more a little, but I don’t have patience to make marshmallows (ok, so I don’t have a candy thermometer, rather!) and my childhood wasn’t one spent outside stuffing cookies with chocolate and white fluff (although if I’d known it existed I would have). Instead, I spent a ridiculous amount of time making endless PB & jam sandwiches; a food group unto itself. Well, there’s a time and place for everything, and the time for sandwiches is waning in my life as I find glee in better things, like lettuce wraps or PB & jam licked right off a spoon. This concoction is the fancy version of the spoon. With a fix of protein, grains, fat and fruit, I think I have my food pyramid covered 😉

Today’s post makes me giddy, because I get to share something super typically South African – the loyal, hardworking rusk. A twice-baked hard biscuit, it’s perfect as a quick snack or breakfast. Ideally it’s meant to be dunked in a hot beverage, but it’s also great to chew as is or give to teething babies, if you’ve got some of those lying around.
Every year I like to bake some goodies for the security guards at work, since they’re always super friendly and helpful, and they have a pretty sucky job dealing with defiant, loud students and cranky professors all day long. I decided to try thumbprint cookies again, this time with more jazz and snazz to them.
