It’s finally here!! I can’t remember if I’ve been sneaky or not about this ebook (which is possibly another layer of ninja if I can hide even that from myself) but I’ve finished and it’s all yours for free and it’s 100% dedicated to my food mistress: chocolate. No matter how busy I get or how lazy, there’s always time in the day for a nibble on something chocolate-y. I may have something of an addiction, but I’ve decided to make a total chocolate cleanse for myself….with chocolate. And since it’s free, you can “cleanse” with me! 😀Being neck-deep in glorious foodie posts all day long I get a whiff of all sorts of folks and their munchies, and every now and again someone is on a cleanse, which, depending on what it’s about, can either make me curious or sad. So this is a chocolate cleanse riot rather than diet because I want to celebrate chocolate, and specifically cacao! Any two-second search on the internet will tell you that cacao is awesome, and even though some of the recipes in the ebook require baking, which apparently diminishes some of these benefits, the most important of the lot I found was that it “increases your bliss”. How can you argue with that?To start off this post of sharing properly I figured I’d ease you into what’s in store, and then share a recipe, since I only ever share one per ebook and I simply had to let you in on the BEST FREAKING DOUGHNUTS EVER!
Anyway, there’s a morning protein shake, baked oatmeal, choc pretzel pops, delectable brownies and more! Seriously, I am at my chocolate limit for the month, and not because I don’t love it but because I’ve been eating chocolate for three days straight in this final dash to the finish line and woah, there really is a point at which one needs to eat a head of broccoli or something as a palate cleanser :p Still, Man-thing has been enjoying himself immensely, making approving noises and bemoaning the few minutes of defrosting it takes for some of the dishes. What a tuff life!Of course, making yum stuff puts me in a bit of a bind, since now he’s had whiff of chocolatey goodies and will no doubt demand it frequently, especially the baked oatmeal. All the recipes in the ebook, which come to think about it may actually also all be gluten-free, are super easy to make it that even the laziest of your partners or friends can manage.So now that you’ve had a preview, let’s get down to the serious business of these doughnuts! These were the first thing I made with my new doughnut pan (or second? I’m losing my mind). Either way, it is gorgeous to munch and to look at. Best of all, it’s freezer friendly!! If you know anything about my style it’s that I have a freezer treat fetish, since I like to keep the freezer for savoury treats and eats. Also, it helps to have something in the house for when life gets you down and you need a sweet treat.
Ingredients: makes 6 doughnuts
- 1 cup canned beans (I used chickpeas)
- ½ cup NuNaturals oat fibre/GF oat flour
- ½ cup brown rice flour
- 2 tsp baking powder
- 4 TBSP aquafaba (bean brine)
- 1/8 cup liquid sweetener (I used NuNaturals Simple Syrup)
- 1/8 cup date soaking water
- 2 tsp apple cider vinegar
- 2 droppers NuNaturals NuStevia Liquid Vanilla (or plain vanilla extract)
- 2 tsp cinnamon + cardamom
- ½ cup soaked dates
- ½ cup soaked dates
- 2 TBSP date soaking water
- 2 TBSP cacao powder
- 1 TBSP protein powder or barley malt powder
- 1 tsp cinnamon
- 1 tsp ginger spice
Nut butter drizzle:
- 2 TBSP almond butter
- 2 TBSP non-dairy milk
- Pinch salt
- 1 tsp ginger spice
- 1 tsp vanilla extract
- 1 tsp caramel essence (or blend the above with 2 soaked dates)
- Preheat the oven to 180C and spray a doughnut pan.
- Blend the doughnut ingredients in a food processor until smooth.
- Scoop into the doughnut pan and bake 10 – 12 minutes.
- Blend the frosting and the drizzle separately, then frost and drizzle the cooled doughnut.
- Store in the freezer and defrost for a few minutes before munching.
I’ll be the first to admit I don’t know much about decorating, especially doughnuts, but it’s the actual ‘nut itself that’s the glory anyway – a delicious, soft but moist and substantial but not dense monster that calls out to be eaten at any time of the day. Plus, with the protein in there it’s really filling and guilt-free, since I’m not into guilt and prefer cheer when scarfing down delights such as this.
