Sunday was all about comfort food, and hence the popcorn blizzard sundae parfait! 😀 Super easy to assemble and just uber tasty! I got to enjoy it all by myself because the brownies have veggies in them and the ice-cream is made with bananas, both of which send Man-thing running for the hills. Nevertheless I decided to wait until he took a nap before making this treat, just to minimize the gloating, because there was lots of it. Lots! sundaesplash

This isn’t so much a recipe post as it is a celebration of sorts (see later in the post). I woke up in such an anxious mood that I knew it was a day for comfort munching, so in between recipe testing for the ebook (which I think should be out this week!!) I had all the right ingredients lying around for this delightful dessert/afternoon snack, which came together in less than 5 minutes (ok, so the brownies were pre-baked :p).sundaebomb sundaebomb1 topsundae

Ingredients (serves 1 -2):

  • 2 bananas, sliced and frozen
  • 2 tsp vanilla essence
  • 1 TBSP soy milk
  • 1 tsp nut or seed butter
  • 2 tsp cacao powder
  • 2 tsp prune or date purée (actually anything can work such as sweet potato, carrot, etc)
  • 1 TBSP boiling water
  • 1 tsp sweetener of choice
  • brownies of choice (why not try some chocolate orange brownies while you wait for the veggie brownie recipe?)
  • Popcorn, nuts, buckwheat groats or choc chips to serve


  1. Blend your bananas, soy milk and vanilla essence in a food processor until it forms a soft serve consistency, scraping as necessary.
  2. Meanwhile, mix your nut/seed butter, cacao powder, purée and boiling water until smooth.
  3. Heat up your brownies (the amount depends on your) and layer them with the ice-cream, popcorn and drizzle.

omnomsundaedrizzleThe plan had been to mix in popcorn into the ice-cream as well, but I was so impatient to just eat the gloriousness that I kind of forgot, and hence why it made an excellent decoration. The bit of crunch is just marvellous and you can replace it with anything such as soaked groats (yum yum) or nuts. I could’ve also layered my drizzle in between as well as on top but I just wanted a messy, gooey beginning to my treat and to end with the still-warm brownie at the bottom (so you get an idea of how quickly I powered through this!).sundaetopyum omnomsundaedrizzle1Isn’t banana ice-cream just the best? Seriously, ice-cream (and chocolate, and baked goodies…) was one of my weaknesses and I must admit becoming vegan did give me a bit of a twinge when it came to the thought that I’d only be eating fruity popsicle sticks the rest of my life. Well, other than the fact that such a thing is probably good for my health in general, I’ve still managed to make some epic ice-creams, with even more tasty variations to come methinks. AKA veganism is not deprivation, and in fact there’s so much food available to me that I have difficulty controlling myself because “it’s just vegetables” 😉
omnomsundae1Speaking of which, I haven’t shared my brownie recipe that I used here yet because I’ve been playing around with it but it is SO good and even Man-thing liked the raw batter for the new batch I made last night (and he must have know there were veggies, or else his brain has a safety function that blocks out such “blasphemous” information). I’ll be posting later this week, along with the root vegetable ebook (AT LAST). I’ve decided that it could go on forever, because I’m not even halfway through my ideas document. Veggies are just so amazing and inspiring – I would never have thought in my youth that one day I’d be eating cauliflower and bananas for dessert!omnomsundaeIn kitty news, I have my three foster boys back with me! Turns out Hermes was not adopted after all and the lady took two other cats, and now all three have snuffles, so when I saw them on Saturday night at the shelter for volunteering my soul absolutely shattered and a deep misery set in until I picked them Sunday morning to recover at our home. The circumstances are not ideal (as in, I don’t want my boys sick!), but I am SO overjoyed with love and happiness to have them with me again, and they are three of the most special love bunnies ever. It’s just amazing that after a while apart they just fell right back into “their” room and into old habits – the second my butt hit the chair they were all over my lap as always, purring like engines. It’s really wonderful to see the siblings and their relationship – grooming each other, practically piled on top of one another if that’s the only way to cuddle on my lap – just worlds of love and joy ❤ ❤ I’m going to cry my eyes out again when they leave but it will be a different sort than when I drove home from the shelter without them on Saturday night. kittiesmeowI’ve decided to finally implement my plan of action that I’d wanted to undertake for ages now for any fosters, which was to dig out my ancient laptop and use that in the cat room to watch series with them, since I don’t care much whether they sneeze on it or what not as I would with my main laptop (I don’t foresee sterilizing a gooey wet spray over a keyboard going down well with the internal circuitry). It was pretty hilarious to see them jump about and the big eyes when I started watching season 1 of Heroes – pretty amazed, and so much so that I had trouble seeing the screen because of all the ears sticking up in front it :p laptime prettyparisSo gorgeous!!! ❤ ❤ ❤ 😀 😀 😀 (AKA prepare yourselves for cat!spam disguised as recipes)
