I thought I could wait until tomorrow to share this but I just can’t. It’s SO GOOD! This is deliciousness and I am totally unapologetic for it. If you have popcorn, PB, chickpeas and chocolate make this now. You will not be sorry! 😀

pbpopcornsquares11I’ve been seeing so many delicious PB-based recipes here and there of late, and considering my deep love for nut butter and difficulty controlling myself around a tub, I figured it would be better served in a more elegant way (that is, not just standing by the pantry with a spoonful in one’s mouth every hour). This stuff is just magical and so tasty, and so ridiculously easy to make. I was half faffing in the kitchen making tea and then just decided “why not”, and not even 10 minutes later had this chilling in the freezer.

Ingredients (makes 12 – 16 squares)

PB base:

  • 2 TBSP barley malt powder
  • 1 cup peanut butter of choice (I use no salt or sugar added)
  • 1/2 cup chickpeas
  • 2 TBSP liquid sweetener (I used NuNaturals Simple Syrup)
  • 2 TBSP xylitol or sweetener of choice
  • 3/4 cup popcorn
  • 2 tsp cinnamon
  • 2 tsp vanilla extract

Chocolate:

  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 2 TBSP liquid sweetener (I used NuNaturals Simple Syrup)

How-to:

  1. Melt the coconut oil and sweetener until transparent, then whisk in the cocoa powder until smooth. Pour half over pre-made popcorn and stir to cover. Set in the fridge and set the other half of the chocolate aside.
  2. Heat up PB and liquid sweetener in a microwave-friendly bowl until it’s a bit more malleable/soft.
  3. Mix in a bowl with mashed or blended chickpeas and rest of PB base ingredients, then break apart and crumble the popcorn a bit before folding in the mixture.
  4. Line a loaf pan and evenly spread and smooth out the mixture.
  5. Pour the rest of the chocolate on top and set in the freezer for an hour before slicing.
  6. Store in the freezer.

pbpopcornsquares2So yes, try controlling yourself – I dare you! That bit of crunchy, chocolate-covered popcorn adds some awesome jazziness, and the chickpeas somehow always make a great, creamy-inducing contribution to any dish or meal. I usually try and keep popcorn on hand for emergency munchies, and since Man-thing’s was marking furiously and had munchies to stave away the sadness of such miserable students (I’m guessing, based on his facial expressions), snacks needed to be in high supply the past weekend. You can leave out the chocolate altogether if you like and want to make it “healthier”, but again, we’re in comfort mode, and honestly it’s delicious, so I’m not fussed 🙂
pbpopcornsquares4You can use any kind of chocolate or melt chocolate chips if you like, so there’s no pressure to make your own, but I love dark chocolate so by making it myself I can control just how bitter or sweet it is. I’ve added sweetener to the recipe but only used a quarter of that, but even then the subtle sweetness of the bars themselves ensure you don’t end up with a lemon-pucker face – far from it!

pbpopcornsquares10Chocolate is where it’s at these days. I’m still munching on the last of the fabulous minty nut chocolate, but these little treats are long gone, thanks to Man-thing (and myself…and a friend, so legit!). They’re so easy to make though I may just whip them up again this weekend, because a combination of the cold, my flu and just general blarghness of body and consequently mind, indulging and spoiling oneself is the best medicine (other than, y’know, actual medicine, which I’ll get today).
pbpopcornsquares6The best part of any PB bar is the fudgy quality – even if you keep it in the fridge it will become something like cookie dough – perfect to add to ice-cream, indulgent smoothie bowls, or just rolled up and popped into your mouth. I had a lot of fun cutting the bars because obviously that’s the best excuse to cut like a crazy person and then having to clean up the edges by eating them all >:)pbpopcornsquares9I can’t do any more convincing – just make it and let me know if you do! 😀
