29 days of rice – Meatless Monday + rice-nog – day 13


Ahoy! We’re back today to Meatless Monday – a glorious way to start any week, methinks! It’s a big excuse to go wild and try out new things, I figure, so I decided to make something different. I have to admit I’ve never had eggnog in my life, but I figure this can’t be too fail if it just so happens to be delicious. Also, this is the bizzare realm of Marfigs, so even if we have a naked emperor sipping fake ‘nog, it’s all good.topstrawnog3Someone asked whether this tastes like rice, and the answer is no! If you blend it for long enough it will be absolutely creamy, and with the dates, sweetener and rum it is just heavenly. Seriously. 😀

One of my favourite things before bed is a cup of hot soy milk with some cinnamon and maybe a TBSP of flax or so. Weekends, however, are one long “before bed” vibe, because I inevitably schloff around in pajamas or something scummy that I can foul up at the cat shelter, and then it’s back to more pajamas. Hence I decided to blend up some rice-nog yesterday (yes, even after the guava rice pudding parfait!) for some late afternoon bliss.topstrawnog31Unfortunately, I was a bit chicken at the thought of alcohol, even so little, so I decided to wait for today to enjoy my super chilly drink after work. I figure eight hours away from our kitsy cat and new house is reason enough to get a little silly!

Ingredients (serves 2):

  • 1 + 1/4 cups non-dairy milk
  • 1/2 cup pre-cooked brown rice
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 cup soaked dates
  • Rum to taste
  • 1 tsp vanilla extract
  • 1-2 TBSP liquid sweetener to taste


  1. Drain your soaked dates and blend all ingredients except rum in a blender until creamy and super smooth.
  2. Add your rum in TBSP measures until it’s tasty – we’re not drinkers at all so we kept it minimal, round 1.5!
  3. Chill in the fridge for half an hour before serving 🙂

We’re systematically going through the house doing odd chores and trying to establish what goes where (too many or too little bookcases – we can’t decide). A bit of rice-nog to unwind is just the ticket!topstrawnog1Apparently the lady at the bottle store didn’t believe Man-thing when he went in asking for an airplane-sized rum bottle for cooking, because I’m sure people buy those things in bulk, but whoo! Usually I’m all about licking my spoons and other utensils as I’m baking, but I nearly died when I did that with my rummy spoon. :p

glasscloseupMan-thing slurped his hard through the straw at the end like a milkshake and proclaimed that I can make it again, reminding me that that’s the seal of approval, so there you have it!
