I’ve never eaten a soft pretzel until today, but now that I have…how does one stop? Delicious, easy, yummy! I must admit I considered a GF version but honestly these were so easy as WW and I was just dying to make some asap, so this happened before I could bring myself to try it any other way.
Yesterday was Heritage Day AKA YAY HOLIDAY! We decided to be proactive about things and go for an early hike at the local nature reserve, because it’s fun to get out on days off and feel like you’ve accomplished something. We also wanted to test it out for future social endeavours, because I’d much rather socialize on a 10km hike than awkwardly at home. We rocked up at the place around 08h00 only to find people were already leaving – it opens at 05h30, and so we learn! I was already up at that hour anyway, but made a point of lounging in bed so that I could get some Man-made coffee. It’s his most awesome habit of late, and he’s been pretty consistent and sweet about making it for me. Now the pressure is on to be equally awesome, but luckily we’ve got a few decades of outsmarting and out-polite-ing each other :p
I don’t quite know how he gets up and down the stairs in this state without falling over himself with the coffee, but I know a certain little creature who is only too happy to have his humans awake at that hour.
A lot of bloggers may a point of sassing about how much water they drink in the mornings, but coffee totally counts as a part of daily water intake. Yes.
Breakfast (o7h00ish): Overnight oats – I used flaxseed powder instead of chia (my superfood cupboard is a bit bare) and then mixed in 1 TBSP of peanut butter and applesauce in the morning. I also used 1/2 cup of oats instead of 1/3, because I am serious about powering up for exercise (even though it wasn’t so strenuous as I’d imagined, but point aside). I love toasty hot breakfast so I must admit I heated it up, but oh so worth it! 😀 Also, check out my fabulous new pants! I found them in the casual wear section of the store, so I can safely proclaim that they are NOT pajamas and I am therefore entitled to wear them everywhere.Pre-hike snack: 1 carrot (couldn’t help myself – carrot addict!)A very weird stop on our hike.
Post-hike snack (10h00ish): We decided to continue our adventure after a little 3.5km hike at Jan Cilliers Park nearby so that we could enjoy our munchies in peace (there were a stream of people at the nature reserve). Steamed carrots, 2 massive romano (I think?) tomatoes, cucumber, homemade hummus, + a zucchini bread muffin for cupcake day! Man-thing prefers muffins to cupcakes, and we didn’t have chocolate chips, but this hit the spot! 😀 Seriously, so moist and delicious! Lunch (13hooish): Blended veggie soup with cheeezy grilled pesto pretzel – I decided to smoothen out our usual soup…for no good reason at all, other than to add more cinnamon and ginger. Also, yum factor. I also chucked some pesto and eventually salsa into the soup for crunch and a bit of coolness to counter the flaming hotness. I was so busy roasting veggies and making pretzel bars that I ended up licking out the food processor quite a lot, which made my appetite swing like a pendulum between stuffed and hungry. Luckily by the time I was done taking some quick snaps I was hungry again!Yay! I finally made soft pretzels and they were just awesome 😀 It was admittedly an excuse to whip out Man-thing’s panini press once more, but I’m as happy as a duck when it comes to toasting things on occasion, and it’s even more magical with melty CHEEZE!
For the pretzel recipe I used this one by Fo Reals Life, minus the baking soda bath and with a paint of soy milk with lots of oregano. This was my second attempt to work with yeast, which is my mortal enemy, and I decided on a recipe that did not require a stand mixer. Spending hours faffing around with machinery and letting dough rise for hours without success? Much sulking. This recipe? Absolute win and delight! I can’t believe it rose and how easy it was to make 😀
Quick beetroot pesto
- 2 big handfuls of beetroot leaves, cleaned and de-stemmed
- big handful basil
- 1/4 cup peanuts
- 1 TBSP mustard
- 1 TBSP applesauce
- 2 TBSP lemon juice
- 1 TBSP apple cider vinegar
- 2 tsp onion powder
- salt to taste
- smoked paprika, ginger + allspice
- Blend the leaves down in the food processor, then add in the rest of the ingredients. Add more spices to taste.
I sliced my pretzel open, filled it with pesto, cheeze, mustard barbecue sauce, then popped it onto the griller. Yum! Radish peppadew salsa on the side, just because. That mustard bbq sauce? DELICIOUS! I didn’t have all the spices and stuff listed but used what was on hand and HOMG the tasty is just too insane. I’m a cider vinegar addict, and that added to spicy mustard? Oh man. ❤I also have to admit, although Emma will not be pleased, that I indulged in a sugar-free red bull (not pictured). When we got home I did washing, roasted tons of veggies for an upcoming soup, and also made lentil balls and pumpkin pretzel bars so I was pretty knackered since all that equalled two to three hours in the kitchen. We go to bed early and wake up early, so on days off I feel it is my solemn duty to stay up for as long as possible just to have more hours of freedom! Also, there may or may not have been 5 – 6 cups of coffee today. Ahem.
Dinner: soup and steamed zucchini – I had ended up taking a little nap after a series Office binge, so I wasn’t too hungry after all the day’s eats. Still, I can’t deny myself the deliciousness of steamed zucchini!
Post-dinner: hot carob drink and more tea. Despite my excessive coffee consumption I also equalled it with some series Rooibos tea during the day. I’m out of all my fun flavours, like peppermint and ginger, but it’ll do for now.
More snackage: cucumber slices (I ate half before I remembered I needed to do photos!) Cucumber prices are FINALLY down in some shops after being x3 their usual price for the past few months due to some cucumber crisis. I’m now addicted to zucchini in my smoothies so I won’t be wasting cucumbers on that, because they are now a precious treat indeed!
