Chocolate zucchini brownies and homemade chocolate experiments

I’ve been scarce, I know, and my baking exploits have been very much neglected, but such is life as a working person! When I get home I just want to put on pajamas and drift off on Reddit or save Skyrim. We did, however, manage to go the a symphony orchestra concert, and man-thing volunteered, all himself, to dress up with a tie and vest vibe, probably because he knows how handsome he looks! ;p

Nevertheless, I made some time in the past few weeks *!!!* to make some treats. The first is the chocolate fudge zucchini brownies by Chocolate Covered Katie, because they looked *divine* and seriously wonderful. I plan to make them again next week for man-thing, except with Smarties, because small things make him happy.


The only thing I left off was the frosting, because I really suck with that sort of thing, but man-thing just slathered peanut butter and jam all over it and started pulling “homggnomnom” noises. I’m definitely going to try some blueberry frosting on top, if I figure out how to make blueberry frosting. *koff*


Obviously, I used my nutty wheat flour, but only because I forgot to use brown rice flour, honest! I’m trying out this gluten-free baking malarky for future recipes, if only because the texture of brown rice flour makes me happy. So soft and fluffy – could play with it for hours! ….um…moving on!

Earlier this week I made some more home-made chocolate after man-thing and I watched Chocolat. Was so inspired by all the shapes and forms that I decided to finally do something with the shell shaped pans I have and make some of my own!


For these I used the usual 1/2 principle of 1/2 cup carob powder (sifted) with 1/2 cup melted coconut oil. I plonked in some raisins and pumpkin seeds, as well as paprika, cinnamon, nutmeg…pretty much everything. šŸ˜€


Seriously, flippin yummy. About 100cals, if you’re interested, for one shell, but it’s as tasty as Lindt (well, the 90% Lindt is beyond divine!).

And, since this is our anniversary weekend (tomorrow is numero uno!) I’m busy making something which I’ll share tomorrow or so. We’re spending the weekend with his mom and sleeping over there because my FIL and SIL are off on a photography outing, which means an epic Friends and NCIS marathon, washed down in tea and stuffed with snacks of delicious form and type. This sadly means I won’t be at home to try make Chocolate Katie’s no bake mint chocolate nanaimo bars, since one has to soak the cashews and what not, but I still have to figure out how to cut out the coconut elements anyhow! Anyway, my point is, sometimes one has to take the time to spoil yourself and others, so that’s what I’ll be doing this weekend! ā¤
