Say hello to my newest obsession – lemon squares! Direct from Chocolate Covered Katie, so one can be assured that she knows what’s what. I went trolling high and low for low-sugar, low-fat diabetic-friendly recipes using lemons after the FIL dished some our way from their backyard tree. He’s a diabetic so I try test out new treats that he can also enjoy, because his face at pudding time during family gatherings is just too sad to not demand action.
Quick, simple, and gorgeously daring on the tongue! Mine, of course, come out less cake-looking than Katie’s, but that’s because I’m stubborn when it comes to a near-obsessive reliance on nutty high fibre wheat instead of plain ol’ cake wheat flour (wholewheat flour is muuuchh too pricey here). Nevertheless, don’t judge my meagre offerings because of their more substantial looking base – it really gives a nice bite to it, but still remains dough-y. The first time I tried this recipe it came out rather dull because I omitted the lemon zest and added linseed powder instead of white, fluffy cornstarch. So we learn!
Apart from the fact that I wanted to perfect the recipe (I knew there was that potential I had to unlock!), my real reason for trying again the very next afternoon was that the man-thing had polished off all 12 bars, as if he had held a magical tea party for unicorns and fairy forest prospectors. Nope, one smirky mouth, one black hole of a stomach. Anyway! This time I decided to use the cornstarch and used man-labour to zest a whole orange peel, and voila!
Added to the base I splashed in lots of nutmeg and cinnamon, as well as ginger. All my food and even evening soy milk adventures contain this delightful combo. All involved are probably relieved I didn’t add spirulina, though I might!

These are very much bite-sized (two if you’re modest) so I really suggest tripling the recipe if you have any monsters in your environs, or else yourself are something of a lemon gorger. No judgements, it really is delicious enough to excuse!
