So today the man thing, sister-in-law & I played some solid games of Settlers of Catan. In prep I made a divine chocolate avo & carrot cake for the occasion with enough to send with her to my other set of parents.
So good. Adapted, naturally and therefore, from Chocolate Covered Katie’s Healthy Chocolate Cake. I did, however, sub the oil for half an avo, used carob powder (same diff!), used nutty wheat high-bran flour instead of normal wholewheat, 1 TBSP baking powder for b.soda (didn’t have! 😦 )… and ja. Oh! Also, one carrot, grated, for style. For the icing I used half of Not Quite Nigella’s avo icing recipe which I then mod’d by adding a TBSP of carob powder, two TBSPs peanut butter…aanndd my gosh, so much icing! So sweet! Glargh! Still, an evening in the fridge settled everything quite nicely.
Also, I got the man thing to eat avo, KNOWINGLY! Again, one of those things he swears up and down he will never eat, and muahaha! It’s like training a rather prissy horse, but by the end of our years I’m determined to have expanded his palette substantially. I suppose the trick is to smother everything in carob powder. Chocolate makes all things better. His first comment post-slice was “I don’t taste avo,” which is mist on water in terms of constructive criticism, but I’ll take what I can get.
This was my attempt at icing using my brand spanking new piping set. Needless to say, epic fail on the classy front, but I still managed to get a semblance of pattern on the whole, so 3/10 for effort?
So, there you have it! My MIL even just send me a thanks-for-the-cake message with actual exclamation marks in it, which for her is wild, wild praise indeed!
